There does not seem to be anywhere to view, edit or delete salesforce OAuth details. You can just create them and if they don't work you can't edit or update, you just have to create another one.

It just seems like a half finished system....

Thanks for your feedback Cloe, At the moment, you can only delete or update the oauth client from the API. We are working on the UI support to allow the user to delete OAuth client.

This feature will be added in the upcoming product release.
